  • 2 cups Romaine lettuce washed and chopped
  • 1 cup Black beans rinsed
  • 1 cup Corn kernels thawed
  • 1 piece Red bell pepper diced
  • 1 piece Avocado diced
  • ½ cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • 1 piece Jalapeño pepper finely minced
  • ¼ cup Fresh cilantro chopped
For the Dressing
  • 2 tablespoons Lime juice freshly squeezed
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • ½ teaspoon Chili powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper
For the Finish

Method
 

Preparation Steps
  1. Wash and dry 2 cups of romaine lettuce, chop into bite-sized pieces, and place in a large salad bowl.
  2. Add 1 cup of black beans, 1 cup of corn, 1 diced red bell pepper, ½ cup of cherry tomatoes, and ¼ cup of red onion to the bowl.
  3. In a small bowl, whisk together 2 tablespoons of lime juice, 2 tablespoons of olive oil, 1 teaspoon of ground cumin, and ½ teaspoon of chili powder.
  4. Pour the dressing over the salad ingredients and toss gently to combine.
  5. Fold in 1 diced avocado carefully to avoid mashing.
  6. Sprinkle ⅓ cup of crumbled feta cheese on top.
  7. Serve immediately or chill for 30 minutes before serving.
