  • 1 medium Bell pepper diced

  • 1 cup Radishes thinly sliced
  • ½ medium Red onion thinly sliced
  • 1 medium Avocado diced
Toppings
  • ½ cup Sunflower seeds
  • ½ cup Feta cheese optional, crumbled
  • ¼ cup Fresh parsley chopped
Dressing
  • ¼ cup Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Wash and chop the romaine lettuce, placing it in a large salad bowl.
  2. Rinse and halve the cherry tomatoes, then add them to the bowl.
  3. Peel and dice the cucumber, then add to the salad along with the diced bell pepper.
  4. Shred the carrot and thinly slice the radishes and red onion, then add to the bowl and toss gently.
  5. Dice the avocado and carefully fold it into the salad.
  6. Sprinkle the sunflower seeds and feta cheese over the salad.
  7. In a mixing bowl, combine the dressing ingredients and whisk until emulsified.
  8. Drizzle the dressing over the salad and toss gently to combine.
  9. Garnish with fresh parsley before serving.
