- Heat 1 teaspoon of olive oil in a large pot over medium heat for about 2 minutes.
- Add 1 cup of ground meat to the pot and cook until browned, roughly 5-7 minutes.
- Stir in 1 teaspoon of garlic, 1 teaspoon of onion powder, and ½ teaspoon of Italian seasoning, cooking for another 2 minutes.
- Pour in 4 cups of broth and 1 cup of marinara sauce, stirring to combine. Bring to a simmer for 3-5 minutes.
- Break 8 oz of lasagna noodles into smaller pieces and add them to the pot. Cook for about 10 minutes.
- Ladle the soup into bowls and top with 1 cup of ricotta cheese and ½ cup of mozzarella cheese.
