Preparation Steps
  1. In a small saucepan, combine ½ cup sugar, ½ cup water, and 4 sprigs of fresh thyme over medium heat.
  2. Stir until the mixture simmers for about 5 minutes, then remove from heat, cool, and strain.
  3. Juice one fresh lemon aiming for about 1 oz of lemon juice.
  4. In a shaker, combine 2 tablespoons fig jam, 2 oz gin, the lemon juice, and thyme syrup.
  5. Stir vigorously until well combined, ensuring the fig jam dissolves.
  6. Strain the mixture into glasses filled with clear ice, filling them about three-quarters full.
  7. Top with approximately 3 oz sparkling water and stir gently.
  8. Garnish with a sprig of fresh thyme and a thin slice of fig.
