- Prepare the chicken by shredding cooked chicken breast. If cooking, season and cook at medium heat for 6-8 minutes until done.
- In a medium bowl, combine Greek yogurt and ranch dressing. Mix in garlic powder, onion powder, smoked paprika, salt, and pepper. Fold in shredded chicken.
- Add red onion, bell pepper, corn, and cilantro or parsley. Mix until even.
- In a small bowl, combine mozzarella, cheddar, and Parmesan. Toss together.
- On one half of each tortilla, sprinkle cheese blend, add chicken mixture, and top with more cheese. Fold tortillas.
- Heat skillet over medium and add oil. Once shimmering, place quesadilla in skillet.
- Cook for 2-3 minutes until golden. Flip and cook an additional 2-3 minutes until crisp and cheese is melted.
- Transfer to a cutting board, rest for 1 minute, then slice into wedges.
- Serve hot with ranch dressing, salsa, and lime wedges.
