Method
 

Cooking Steps
  1. Preheat the oven to 325°F.
  2. Season the beef chunks with kosher salt and coarsely ground black pepper.
  3. Coat the beef with gluten-free all-purpose flour.
  4. Heat olive oil in a large Dutch oven over medium heat and brown the beef in batches.
  5. Sauté the yellow onion, garlic, and carrots in the same pot for 2-3 minutes.
  6. Add Yukon Gold potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and fresh thyme.
  7. Return the browned beef to the pot, cover, and transfer to the oven to cook for 2-2.5 hours.
  8. Remove the bay leaf, taste, and adjust seasoning before serving.
