Cooking Steps
- Preheat the oven to 325°F.
- Season the beef chunks with kosher salt and coarsely ground black pepper.
- Coat the beef with gluten-free all-purpose flour.
- Heat olive oil in a large Dutch oven over medium heat and brown the beef in batches.
- Sauté the yellow onion, garlic, and carrots in the same pot for 2-3 minutes.
- Add Yukon Gold potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and fresh thyme.
- Return the browned beef to the pot, cover, and transfer to the oven to cook for 2-2.5 hours.
- Remove the bay leaf, taste, and adjust seasoning before serving.
