  • 2 cups Sweet Potato, diced
  • 1 can Chickpeas, drained and rinsed
  • 1 cup Coconut milk
  • 1 tablespoon Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ginger, grated
  • 2 cloves Garlic, minced
  • 1 cup Vegetable broth
  • 1 tablespoon Olive oil
  • Salt to taste
  • Pepper to taste

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Stir in sweet potatoes and cook for 5 minutes.
  4. Add the curry powder and cumin, stir for 1 minute.
  5. Pour in the vegetable broth and coconut milk.
  6. Add chickpeas and simmer for 25-30 minutes until sweet potatoes are tender.
  7. Season with salt and pepper to taste, serve warm.
