Steps
  1. Marinate the chicken by combining sweet chili sauce, soy sauce, ginger, and garlic in a bowl. Coat chicken thighs and marinate for at least 20 minutes.
  2. Cook the marinated chicken in a skillet with vegetable oil over medium heat, for 6–8 minutes per side until golden brown and reaches 165°F.
  3. Prepare jasmine rice according to package instructions, then fluff with a fork and divide into bowls.
  4. Whisk together coconut milk, lime juice, lime zest, honey, red pepper flakes, salt, and pepper until smooth.
  5. Assemble bowls by topping rice with sliced chicken, red bell pepper, cucumber, and carrot. Add chopped cilantro.
  6. Drizzle coconut lime sauce over each bowl and serve.
