For the Chicken
  • 1 lb boneless, skinless chicken breasts
  • ¼ cup cornstarch
For the Sauce
  • ½ cup vinegar (white or apple cider)
  • ¼ cup ketchup
  • 2 tablespoons soy sauce
  • ¾ cup sugar
  • 1 clove minced garlic
  • 1 tablespoon grated ginger
For the Veggies
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium onion
  • 1 cup pineapple chunks
Optional Thickening
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Method
 

Preparation Steps
  1. In a large bowl, toss the chicken pieces with cornstarch until well-coated. Set aside.
  2. Heat vegetable oil in a skillet over medium-high heat. Add coated chicken and cook until golden brown, about 5–7 minutes. Remove from skillet.
  3. Add remaining oil to the skillet. Stir in chopped red bell pepper, green bell pepper, and onion. Cook for 3–4 minutes.
  4. In a medium bowl, whisk together vinegar, ketchup, soy sauce, sugar, minced garlic, and grated ginger. Stir until sugar dissolves.
  5. Return chicken to the skillet. Pour sauce mixture over the chicken and vegetables. Stir well to coat everything.
  6. Fold in pineapple chunks and simmer for 5 minutes over medium heat.
  7. To thicken, mix cornstarch with water and add to the skillet. Stir until the sauce thickens to your desired consistency.
  8. Season with salt and pepper, serve over rice or noodles, and garnish with chopped green onions.
