Preparation Steps
- In a large bowl, toss the chicken pieces with cornstarch until well-coated. Set aside.
- Heat vegetable oil in a skillet over medium-high heat. Add coated chicken and cook until golden brown, about 5–7 minutes. Remove from skillet.
- Add remaining oil to the skillet. Stir in chopped red bell pepper, green bell pepper, and onion. Cook for 3–4 minutes.
- In a medium bowl, whisk together vinegar, ketchup, soy sauce, sugar, minced garlic, and grated ginger. Stir until sugar dissolves.
- Return chicken to the skillet. Pour sauce mixture over the chicken and vegetables. Stir well to coat everything.
- Fold in pineapple chunks and simmer for 5 minutes over medium heat.
- To thicken, mix cornstarch with water and add to the skillet. Stir until the sauce thickens to your desired consistency.
- Season with salt and pepper, serve over rice or noodles, and garnish with chopped green onions.
