Method
 

Step‑by‑Step Instructions
  1. In a medium saucepan, combine 1 cup of rice with 2 cups of water or chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Fluff and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef or turkey. Season with salt, pepper, and taco seasoning. Cook for 5-7 minutes until browned.
  3. Stir in 1 can of drained black beans and 1 cup of corn. Cook for an additional 2-3 minutes until heated through.
  4. To serve, scoop rice into a bowl and layer the taco meat mixture on top.
  5. Add 1 cup of diced tomatoes, 1 cup of shredded lettuce, and 1 cup of shredded cheddar cheese on top.
  6. Drizzle with salsa, garnish with fresh cilantro, and serve with lime wedges.
