Ingredients
  

For the Manicotti
  • 12 pieces manicotti shells choose large shells
  • 15 ounces ricotta cheese opt for whole milk
  • 1 cup shredded mozzarella cheese adds gooeyness
For the Meat Sauce
  • 1 pound ground beef or Italian sausage choose your favorite
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 28 ounces crushed tomatoes canned San Marzano recommended
  • 1 tablespoon Italian seasoning blend of basil, oregano, and thyme
To Assemble
  • 1 cup parmesan cheese freshly grated
  • ¼ cup fresh basil chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Cook the manicotti shells in boiling salted water for about 8 minutes until al dente. Drain and cool.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion for about 5 minutes. Add minced garlic and cook for another minute.
  3. Add ground beef or sausage to the skillet, breaking it apart. Cook for about 8 minutes until fully browned.
  4. Pour in crushed tomatoes and Italian seasoning. Simmer for about 10 minutes to meld flavors.
  5. In a bowl, combine ricotta, mozzarella, and salt/pepper to prepare the cheese filling.
  6. Fill each manicotti shell with the cheese mixture, then place in a baking dish.
  7. Pour half the meat sauce over the shell, sprinkle with mozzarella, then pour remaining sauce. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake for an additional 10 minutes. Let rest for 5 minutes before serving and garnish with parmesan and basil.
