  • 4 medium carrots chopped

  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 2 bay leaves
For the Gravy
  • 2 tablespoons cornstarch
  • 4 tablespoons cold water to make a slurry
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Step-by-Step Instructions
  1. Prepare the Roast by patting it dry and seasoning with salt and pepper.
  2. Sear the Roast in a pan with olive oil until browned, about 4-5 minutes on each side.
  3. Sauté the onions in the same pan until soft, then add the minced garlic.
  4. Mix in seasoning ingredients with the sautéed onions.
  5. Deglaze the pan with beef stock and scrape up browned bits.
  6. Combine everything in the slow cooker with vegetables and remaining broth.
  7. Add fresh herbs and season to taste.
  8. Slow Cook the pot roast on low for 8-10 hours or high for 4-5 hours.
  9. Prepare the gravy by straining the cooking liquid and thickening with cornstarch slurry.
  10. Serve and garnish with chopped parsley.
