  • 2 unit ripe avocados diced
  • 1 unit large mango diced
  • 1 cup cherry tomatoes halved
  • 1 small red onion finely chopped

Step-by-Step Instructions
  1. In a medium bowl, combine the shrimp, olive oil, lime juice, cumin, salt, and pepper. Marinate for about 10 minutes.
  2. Heat a skillet over medium-high heat and add the marinated shrimp. Sauté for 2-3 minutes on each side until pink and opaque.
  3. While shrimp cook, dice the avocados, mango, halve the cherry tomatoes, and chop the red onion. Combine them in a large mixing bowl.
  4. Once cooled, add the shrimp to the mixing bowl with the avocado, mango, tomatoes, and onion. Toss gently to mix.
  5. Divide the mixture into bowls and garnish with cilantro and lime juice if desired.
