  • 1 tablespoon olive oil

  • fresh lemon for squeezing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, drizzle halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper; toss to coat.
  3. Spread the seasoned potatoes on one side of the baking sheet and roast for 15 minutes.
  4. While potatoes roast, trim and chop seasonal vegetables and season with olive oil, salt, and pepper.
  5. After 15 minutes, remove the baking sheet and push the potatoes to one side, adding salmon and vegetables to the empty side.
  6. Season salmon with salt and pepper, then return the baking sheet to the oven and roast for an additional 15 to 20 minutes until done.
  7. Garnish with fresh lemon and chopped parsley before serving.
