- Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper.
- Combine chicken breasts, olive oil, paprika, garlic powder, onion powder, salt, and black pepper in a bowl.
- Arrange chicken on the sheet pan and bake for 20–25 minutes, until cooked through.
- In a small bowl, whisk together mayonnaise, Greek yogurt, garlic, lemon juice, chives, dill, salt, and pepper.
- Let the chicken rest for about 5 minutes and then slice into pieces.
- Warm pita breads in the oven for 2–3 minutes until soft.
- Assemble the pitas with herby ranch, sliced chicken, tomatoes, cucumber, red onion, and lettuce.
- Serve immediately with extra herby ranch on the side.
