- Start by bringing 4 cups of water to a rolling boil in a large pot over high heat.
- Once boiling, add 8 ounces of white wheat noodles and cook until al dente for about 6–8 minutes.
- While the noodles are cooking, heat ½ cup of vegetable oil in a skillet over medium heat for about 2 minutes.
- Add 4 chopped green onions and fry for 2–3 minutes until fragrant and golden.
- Remove the skillet from heat and let the oil infuse for about 5 minutes.
- In a mixing bowl, whisk together 2 tablespoons of light soy sauce, 2 tablespoons of dark soy sauce, and 1 tablespoon of sugar.
- Drain the noodles and transfer them to the bowl with the sauce mixture, tossing well to coat.
- Drizzle the scallion-infused oil over the sauced noodles and mix gently.
- Portion the noodles onto plates and sprinkle with ¼ cup of crispy fried green onions before serving.
