Method
 

Cooking Steps
  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the halved baby potatoes with olive oil, oregano, salt, and black pepper. Toss to coat.
  3. Spread the seasoned potatoes in a single layer on a baking sheet. Tuck the whole cloves of garlic among the potatoes.
  4. Create a space in the center of the baking sheet for the block of feta cheese and drizzle with more olive oil if desired.
  5. Roast in the oven for 25 to 30 minutes until potatoes are golden brown and feta is soft.
  6. Remove from oven, let cool briefly, and mash the feta with roasted garlic to create a creamy sauce.
  7. Serve the potatoes garnished with chopped parsley and optional red pepper flakes.
