Ingredients
  

For the Meatballs
  • 1 lb Ground lamb
  • ½ cup Breadcrumbs
  • 1 large Egg
  • 1 tablespoon Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • ½ cup Finely chopped red onion
  • ¼ cup Chopped fresh parsley
  • Salt to taste
  • Black pepper to taste
For the Quinoa and Veggies
  • 1 cup Quinoa
  • 2 cups Water
  • 1 tablespoon Olive oil
  • 1 medium Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • ½ cup Crumbled feta cheese
  • ¼ cup Sliced kalamata olives
For the Dressing
  • 1 tablespoon Tzatziki sauce
  • 1 tablespoon Lemon juice

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the ground lamb, breadcrumbs, egg, dried oregano, ground cumin, garlic powder, finely chopped red onion, chopped parsley, salt, and pepper until combined.
  3. Shape the mixture into 12-14 meatballs and arrange them on the baking sheet.
  4. Bake for 15-20 minutes until golden brown and cooked through.
  5. While the meatballs bake, rinse quinoa under cold water and then cook in boiling water for 15 minutes until fluffy.
  6. In a small bowl, whisk together olive oil, lemon juice, and seasonings for the dressing.
  7. Divide the cooked quinoa into bowls and top with meatballs, cucumber, tomatoes, feta, and olives.
  8. Drizzle with tzatziki and dressing before serving.
