Preparation
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, mix together the ground lamb, breadcrumbs, egg, dried oregano, ground cumin, garlic powder, finely chopped red onion, chopped parsley, salt, and pepper until combined.
- Shape the mixture into 12-14 meatballs and arrange them on the baking sheet.
- Bake for 15-20 minutes until golden brown and cooked through.
- While the meatballs bake, rinse quinoa under cold water and then cook in boiling water for 15 minutes until fluffy.
- In a small bowl, whisk together olive oil, lemon juice, and seasonings for the dressing.
- Divide the cooked quinoa into bowls and top with meatballs, cucumber, tomatoes, feta, and olives.
- Drizzle with tzatziki and dressing before serving.
