  • 2 pieces green onions chopped
  • fresh vegetables like bok choy or sliced cucumbers
  • chopped peanuts for garnish

Method
 

Cooking Steps
  1. Bring a large pot of water to a rolling boil and cook the fresh noodles according to package instructions, about 3-5 minutes. Drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add ground pork and cook for 5-7 minutes, breaking apart as it cooks.
  3. Stir in minced garlic and ginger into the skillet, sautéing for 1-2 minutes.
  4. Lower the heat and add soy sauce, sesame paste or peanut butter, chili oil, and rice vinegar. Stir to combine and let simmer for a minute.
  5. Toss the cooked noodles into the skillet, gently mixing to coat in sauce for about 2-3 minutes.
  6. Sprinkle in Sichuan peppercorns to taste and stir to incorporate.
  7. Plate the noodles and garnish with green onions, vibrant fresh vegetables, and crushed peanuts.
