For the Beef
  • 1 pound Beef sirloin or flank steak thinly sliced against the grain
  • 1 tablespoon Cornstarch
For the Sauce
  • 3 tablespoons Soy sauce low-sodium if desired
  • 1 tablespoon Oyster sauce can substitute with hoisin if needed
  • 1 teaspoon Sugar reduce for less sweet
  • 1 teaspoon Freshly ground black pepper
For the Aromatics
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh ginger minced
  • 1 large Onion sliced
  • 2 scallions Green onions sliced
For Cooking
  • 2 tablespoons Vegetable oil or canola/peanut oil
  • 1 teaspoon Sesame oil for drizzling
  • 1 tablespoon Shaoxing wine or dry sherry omit if not available
For Serving
  • 4 cups Cooked rice or noodles

Method
 

Preparation Steps
  1. Marinate the beef in a bowl with soy sauce, cornstarch, Shaoxing wine, and sesame oil for 15-20 minutes.
  2. Prepare the sauce by whisking together soy sauce, oyster sauce, sugar, and black pepper.
  3. Stir-fry the marinated beef in heated vegetable oil over high heat for 2-3 minutes, then remove and set aside.
  4. Sauté minced garlic and ginger in the same wok for 30 seconds until fragrant.
  5. Add sliced onions and stir-fry for 2-3 minutes until softened.
  6. Combine beef and any juices with the onions and pour in the prepared sauce; cook for an additional 2-3 minutes.
  7. Toss in sliced green onions and stir well before serving.
  8. Serve hot over cooked rice or noodles.
