Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cups of sliced mushrooms and sauté for about 5-7 minutes until soft and browned.
  3. In the same skillet, add 2 cups of chopped fresh spinach and sauté for 2-3 minutes until wilted.
  4. In a mixing bowl, toss together 1 pound of bite-sized chicken pieces with 1 teaspoon each of garlic powder, onion powder, oregano, paprika, and salt and pepper to taste.
  5. Spread the seasoned chicken pieces in an even layer in a large baking dish. Top with the sautéed spinach and mushrooms.
  6. Sprinkle 1 cup of shredded mozzarella cheese and ½ cup of grated Parmesan cheese over the top.
  7. Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  8. After baking, remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden brown.
  9. Let it cool for a few minutes before serving.
