Preparation Steps
- Preheat your oven to 400°F (200°C).
- Toss diced butternut squash with 1 tablespoon of olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes.
- Heat 1 tablespoon of olive oil in a skillet over medium-low heat. Add onions and caramelize for about 20 minutes.
- Roll out the puff pastry to fit your tart pan and pricking the bottom with a fork.
- Spread caramelized onions over the puff pastry, layer roasted butternut squash, crumble goat cheese, drizzle with cream, and sprinkle with thyme.
- Bake the assembled tart for 25-30 minutes, until pastry is golden brown.
- Allow to cool for 10 minutes before serving.
