  • 2 cups Butternut squashes diced
  • 2 medium Onions thinly sliced
  • 2 tablespoons Olive oil for roasting and sautéing
  • 1 teaspoon Salt sea salt preferred
  • 1 teaspoon Black pepper freshly cracked
  • 1 tablespoon Fresh thyme or dried
  • 4 ounces Goat cheese crumbled
  • ½ cup Heavy cream or dairy-free alternative
  • 1 large Egg for egg wash

  • ½ teaspoon Red pepper flakes for heat

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced butternut squash with 1 tablespoon of olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-low heat. Add onions and caramelize for about 20 minutes.
  4. Roll out the puff pastry to fit your tart pan and pricking the bottom with a fork.
  5. Spread caramelized onions over the puff pastry, layer roasted butternut squash, crumble goat cheese, drizzle with cream, and sprinkle with thyme.
  6. Bake the assembled tart for 25-30 minutes, until pastry is golden brown.
  7. Allow to cool for 10 minutes before serving.
