- Begin by thinly slicing your pork and marinating it in a mixture of soy sauce and sesame oil for about 10–15 minutes.
- Cook your thick, chewy noodles according to the package instructions, typically around 5–7 minutes in boiling water. Drain and rinse under cold water.
- Heat a large skillet or wok over medium-high heat and add a splash of oil. Once hot, add the marinated pork and stir-fry for about 4–5 minutes until golden brown.
- Add chopped cabbage, sliced mushrooms, and green onions to the pan. Stir-fry for another 3–4 minutes until the vegetables are tender yet crisp.
- Introduce prepared thick noodles to the skillet, drizzle in the umami-rich sauce, and toss everything together over medium heat for about 2–3 minutes.
- Continue to stir-fry the noodles with the other ingredients for another couple of minutes until everything is heated through and flavors meld.
