Steps
- Heat the skillet by adding 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
- Season 4 salmon fillets with salt and black pepper; sear skin-side down for 4-5 minutes until golden.
- Flip the salmon and cook for another 3-4 minutes until cooked through. Set aside.
- In the same skillet, sauté 3 cloves of minced garlic for about 1 minute until fragrant.
- Deglaze with ½ cup of chicken broth, scraping the skillet to mix in flavors; simmer for about 2 minutes.
- Stir in 1 cup of heavy cream, the zest and juice of 1 lemon, and 2 tablespoons of capers, simmer to thicken for 2-3 minutes.
- Return the salmon to the skillet and spoon sauce over it; cook for an additional 1-2 minutes until heated through.
- Garnish with freshly chopped parsley and serve warm.
