Method
 

Preparation Steps
  1. In a mixing bowl, whisk together olive oil, honey, chopped fresh thyme, minced garlic, balsamic vinegar, and a sprinkle of salt and pepper.
  2. Gently fold fresh blueberries into the marinade.
  3. Place chicken breasts in a resealable bag, pour the marinade over them, and refrigerate for at least 30 minutes.
  4. Preheat your oven to 400°F (200°C).
  5. In a skillet, heat a drizzle of olive oil and sear the chicken breasts for 3-4 minutes on each side.
  6. Pour the reserved marinade and blueberries over the chicken in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes.
  8. Once baked, let the chicken rest for about 5 minutes.
  9. Slice the chicken and serve with the blueberry sauce spooned on top.
