- Preheat your oven to 375°F (190°C).
- Wash and peel the potatoes, then cut them into uniform chunks, about 1-inch in size. Boil in salted water until fork-tender for about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add in cheddar cheese, bacon bits, minced garlic, and diced onion. Stir gently until well-coated.
- Grease a 9x13-inch baking dish and spoon the mixture into it, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted, bubbly, and golden brown.
- Remove and let cool for about 5-10 minutes before serving.
