- Heat 1 tablespoon of olive oil in a medium-sized skillet over medium heat for about 1-2 minutes until shimmering.
- Sauté the chopped onion for 3-4 minutes until translucent, then stir in 2 minced garlic cloves and cook for another minute.
- Add the drained black beans, 1 teaspoon of smoked paprika, ½ teaspoon of ground cumin, and salt and pepper to taste. Cook for about 5 minutes.
- Make small wells in the bean mixture and crack 4 large eggs into each well.
- Cover the skillet with a lid and reduce heat to low. Cook for 5-7 minutes until egg whites are set but yolks remain runny.
- Garnish with fresh cilantro or parsley before serving.
- Serve with optional toppings like avocado slices and crumbled feta.
