  • 1 pound sirloin steak cut into bite-sized pieces
  • 1 tablespoon olive oil for searing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
For the Tortellini
  • 9 ounces cheese tortellini fresh or frozen
  • 1 cup cherry tomatoes halved
For the Greens
  • 3 cups baby spinach
For Cooking & Garnishing
  • ½ cup beef broth
  • ½ cup grated Parmesan cheese
  • to taste fresh basil for garnish

Method
 

Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat for about 2 minutes until hot. Add 1 tablespoon of olive oil.
  2. Season the sirloin steak pieces with garlic powder, onion powder, salt, and pepper. Sear in the skillet for 2-3 minutes until browned.
  3. Drizzle in the remaining tablespoon of olive oil and add the halved cherry tomatoes. Sauté for about 2 minutes.
  4. Stir in the baby spinach and cook for another 1-2 minutes until wilted.
  5. Pour in the beef broth and bring to a simmer. Add the cheese tortellini and cook according to the package instructions for 3-5 minutes.
  6. Return the seared steak to the skillet and stir in the grated Parmesan cheese until melted.
  7. Taste and adjust seasonings with salt or pepper if needed.
  8. Serve hot, garnished with fresh basil.
