Prepare the Sushi Rice
- Rinse 1 cup of sushi rice in cold water until clear, about 2-3 minutes. Combine rinsed rice and 1½ cups of water in a pot; bring to boil, cover, and reduce to low heat for 15 minutes. Stir in rice vinegar and salt, then let sit covered for 10 minutes.
Cook the Shrimp
- Heat olive oil in a skillet over medium-high heat. Cook the shrimp for 2-3 minutes each side until opaque. Mix soy sauce, rice vinegar, sesame oil, sugar, and sriracha; drizzle over shrimp and cook for 1 more minute.
Make the Spicy Mayo
- In a bowl, blend mayonnaise with sriracha to create spicy mayo. Adjust heat to taste and set aside.
Assemble the Sushi Stacks
- Layer sushi rice, shrimp, avocado, and cucumber in a round mold; press down gently for structure.
Garnish and Serve
- Sprinkle with sesame seeds, drizzle spicy mayo on top, and garnish with cilantro or green onions. Lift mold to serve.
