Ingredients
  

For the Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 tablespoons olive oil for sautéing
  • 2 tablespoons soy sauce adds umami flavor

  • 2 teaspoons sugar for sweetness
  • 1 tablespoon sesame oil adds nutty aroma

For the Rice
  • 1 cup sushi rice sticky rice
  • 1.5 cups water to cook the rice
  • 1 tablespoon rice vinegar for flavor

For the Stacks
  • 1 each avocado sliced thinly
  • 1 small cucumber julienned
  • 0.5 cup mayonnaise for spicy mayo
  • 1 tablespoon sesame seeds optional, for garnish
  • each fresh cilantro or green onions optional, for garnish

Method
 

Prepare the Sushi Rice
  1. Rinse 1 cup of sushi rice in cold water until clear, about 2-3 minutes. Combine rinsed rice and 1½ cups of water in a pot; bring to boil, cover, and reduce to low heat for 15 minutes. Stir in rice vinegar and salt, then let sit covered for 10 minutes.
Cook the Shrimp
  1. Heat olive oil in a skillet over medium-high heat. Cook the shrimp for 2-3 minutes each side until opaque. Mix soy sauce, rice vinegar, sesame oil, sugar, and sriracha; drizzle over shrimp and cook for 1 more minute.
Make the Spicy Mayo
  1. In a bowl, blend mayonnaise with sriracha to create spicy mayo. Adjust heat to taste and set aside.
Assemble the Sushi Stacks
  1. Layer sushi rice, shrimp, avocado, and cucumber in a round mold; press down gently for structure.
Garnish and Serve
  1. Sprinkle with sesame seeds, drizzle spicy mayo on top, and garnish with cilantro or green onions. Lift mold to serve.
