Chicken Cooking
- In a large skillet, heat olive oil over medium heat. Add chicken thighs, cooking about 6-7 minutes per side until golden brown and cooked through.
- Remove chicken from the pan and set aside to keep warm.
Gravy Preparation
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Sprinkle flour over the garlic and stir for about 1 minute to create a roux.
- Gradually add chicken broth while stirring. Cook for 2-3 minutes until thickened.
- Stir in heavy cream and simmer for about 5 minutes, seasoning with salt and pepper.
- Return chicken to the pan and simmer for another 3-5 minutes.
Mashed Potatoes
- In a mixing bowl, combine mashed potatoes, butter, shredded cheddar cheese, and milk. Mix until creamy and well-blended.
Serving
- Serve chicken topped with garlic gravy alongside cheesy mashed potatoes.
