Step-by-Step Instructions for Budae Jjigae
  1. In a large pot, pour in the 4 cups of broth and place it over medium heat. Allow it to warm for about 5 minutes, stirring occasionally until it’s steaming but not boiling.
  2. Once the broth is hot, introduce 1 cup of kimchi, 1 cup of cubed tofu, and 1 cup of sliced sausage into the pot. Stir gently and let it simmer for another 5 to 7 minutes.
  3. Stir in 2 tablespoons of gochujang and 1 tablespoon of gochugaru, ensuring they blend well with the simmering stew. Continue to cook for another 2 to 3 minutes.
  4. Drop in 1 cup of your chosen noodles and cook according to the package instructions, usually around 3 to 5 minutes.
  5. Once the noodles are cooked, turn off the heat and let the stew sit for a minute. Ladle into bowls, optionally garnishing with sliced green onions or sesame seeds.
