- In a large saucepan, melt 3 tablespoons of butter over low heat. Stir in 4 cups of mini marshmallows until smooth, about 5 minutes. Remove from heat and fold in 6 cups of rice cereal.
- Using a greased spatula or wax paper, scoop portions of the mixture and shape into 2-inch cookies. Place on parchment-lined baking sheet to cool for 30 minutes.
- Once cookies are set, insert two pretzel twists into the top of each cookie as antlers.
- Melt chocolate chips in the microwave for 30 seconds. Using a piping bag or toothpick, drop two dots of chocolate onto each cookie for eyes.
- Place a red candy coating or M&M in the center of each cookie for Rudolph’s nose.
- Let the cookies rest for 10-15 minutes until the chocolate hardens.
