  • ½ cup Cooked shrimp
  • ½ cup Rice noodles
  • 1 tablespoon Sesame seeds
For the Spicy Ginger Dressing
  • 1 tablespoon Rice vinegar
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 tablespoon Fresh ginger
  • 1 clove Garlic
  • 1 tablespoon Lime juice
  • 1 tablespoon Sriracha sauce
  • 2 tablespoons Olive oil

Method
 

Step-by-Step Instructions
  1. Rinse mixed greens and dry them, then place in a salad bowl.
  2. Shred carrots and add to the salad bowl.
  3. Slice cucumber and add to the salad mixture.
  4. Thinly slice red bell pepper and mix it into the salad.
  5. Chop fresh cilantro and mint, then sprinkle over the salad.
  6. Chop green onions and add to the salad mixture.
  7. Slice cooked shrimp and gently fold it into the salad.
  8. Set aside the cooked rice noodles in a separate bowl.
  9. Mix dressing ingredients in a small bowl and whisk together.
  10. Slowly drizzle olive oil into the dressing while whisking.
  11. Pour dressing over the salad and toss gently to combine.
  12. Sprinkle sesame seeds on top just before serving.
  13. Serve immediately or refrigerate for up to an hour before serving.
