Prepare the Salad
- Whisk together the olive oil, balsamic vinegar, oregano, and basil in a small bowl. Add salt and pepper to taste and set aside for 5 minutes.
- Peel the cucumber, if desired, and score the sides with a fork for added texture. Slice and dice into bite-sized pieces.
- Quarter the cherry tomatoes and add them to the bowl with the cucumber. Optionally, finely dice the red onion and add it to the mixture.
- Cut the mozzarella into bite-sized pieces or use mini balls and mix them in with the cucumber and tomatoes.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly.
- Let the salad rest for about 10 minutes before serving for flavors to meld.
