  • 1 tablespoon balsamic vinegar adjust based on sweetness preference
  • 1 teaspoon dried oregano fresh oregano can be used for more flavor
  • 1 teaspoon dried basil consider using fresh basil for garnish
Salad
  • 1 large English cucumber for crunch and hydration
  • 1 cup cherry tomatoes any small tomato variety will work
  • 8 ounces fresh mozzarella pat dry to reduce excess moisture
  • ¼ small red onion optional; can be omitted for a milder flavor
  • to taste fresh basil leaves ideal for garnish and flavor enhancement

Method
 

Prepare the Salad
  1. Whisk together the olive oil, balsamic vinegar, oregano, and basil in a small bowl. Add salt and pepper to taste and set aside for 5 minutes.
  2. Peel the cucumber, if desired, and score the sides with a fork for added texture. Slice and dice into bite-sized pieces.
  3. Quarter the cherry tomatoes and add them to the bowl with the cucumber. Optionally, finely dice the red onion and add it to the mixture.
  4. Cut the mozzarella into bite-sized pieces or use mini balls and mix them in with the cucumber and tomatoes.
  5. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  6. Let the salad rest for about 10 minutes before serving for flavors to meld.
