  • 0.5 cup Unsalted butter softened
  • 2 cups Powdered sugar

Method
 

Cookie Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the granulated sugar, brown sugar, and softened unsalted butter. Cream together until light and fluffy (about 3-4 minutes).
  3. Mix in the pumpkin puree, egg yolk, and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add to the wet mixture, stirring gently.
  5. Scoop rounded tablespoons of dough onto prepared baking sheets.
  6. Bake the cookies for about 12 minutes. Allow to cool for a few minutes before transferring to a cooling rack.
  7. In a mixing bowl, beat together the cream cheese and unsalted butter until smooth. Add powdered sugar, vanilla, and salt, mixing until fluffy.
  8. Once the cookies are cooled, spread the cream cheese frosting generously over each cookie.
