Cookie Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the granulated sugar, brown sugar, and softened unsalted butter. Cream together until light and fluffy (about 3-4 minutes).
- Mix in the pumpkin puree, egg yolk, and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add to the wet mixture, stirring gently.
- Scoop rounded tablespoons of dough onto prepared baking sheets.
- Bake the cookies for about 12 minutes. Allow to cool for a few minutes before transferring to a cooling rack.
- In a mixing bowl, beat together the cream cheese and unsalted butter until smooth. Add powdered sugar, vanilla, and salt, mixing until fluffy.
- Once the cookies are cooled, spread the cream cheese frosting generously over each cookie.
