Cooking Steps
- Start by slicing the smoked sausage into bite-sized pieces. Heat 2 tablespoons of olive oil in a large pot or skillet over medium heat. Once the oil is hot, add the sliced sausage and cook for about 3-4 minutes, stirring occasionally, until browned and heated through.
- Toss in 1 cup of diced bell peppers and ½ cup of diced onion with the sausage. Sauté everything together for about 3-4 minutes, until the vegetables start to soften.
- Stir in 1 tablespoon of Cajun seasoning and 1 teaspoon of garlic powder. Pour in 2 cups of pasta and 1 cup of chicken broth, stirring to combine. Bring to a simmer for about 8-10 minutes.
- Once the pasta is al dente, lower the heat to a gentle simmer. Pour in 1 cup of heavy cream and 1 cup of shredded Parmesan cheese, stirring until the cheese melts.
- Taste and season with salt and pepper as needed. Spoon the pasta into bowls, garnishing with chopped parsley.
