Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your cookware, including a large Dutch oven.
- In your Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat. Sear the brisket for about 4-5 minutes on each side until it's browned.
- Remove the brisket and set aside. In the same pot, sauté 2 cups of chopped onion, 1 cup of chopped carrots, and 1 cup of chopped celery until tender.
- Stir in 2 cups of beef broth, 1 cup of red wine, and 2 tablespoons of tomato paste. Add the remaining seasonings and bring to a gentle simmer.
- Return the seared brisket to the pot, cover, and bake for 3-4 hours until fork-tender.
- Remove from the oven and let the brisket rest for 10-15 minutes before slicing.
- Slice against the grain and serve drizzled with the sauce. This dish pairs beautifully with mashed potatoes or crusty bread.

Notes
Choose quality meat for enhanced flavor, and don't skip the resting stage for juicy slices.
