- Heat 3 tablespoons of oil in a large pan over medium heat. Once the oil shimmers, add 2 sliced onions and sauté for about 10 minutes until golden brown.
- Stir in 1 tablespoon of ginger-garlic paste and 2 teaspoons of cumin seeds. Cook for 2 minutes, stirring frequently, until fragrant.
- Add 2 teaspoons of coriander powder, 1 teaspoon of turmeric powder, 2 teaspoons of red chili powder, and salt to taste. Cook for 1 minute, stirring well.
- Introduce 1 pound of mutton, cut into pieces, into the pan and sear for about 5-7 minutes until browned on all sides.
- Pour in 1 cup of water, bring to a boil, reduce heat to low, cover, and simmer for 45-60 minutes.
- Once the mutton is tender, sprinkle 1 teaspoon of garam masala, stir well, and cook for another 5 minutes.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
