Step-by-Step Instructions for Beef Osso Buco
- Preheat your oven to 350°F (175°C).
- In a large Dutch oven, heat ¼ cup of olive oil over medium heat. Sear each shank for about 4-5 minutes on each side until golden-brown.
- Remove the shanks and sauté onion, carrot, celery, and garlic for 5-7 minutes until softened.
- Pour in 1 cup of white wine to deglaze the pot. Allow to simmer for 2-3 minutes.
- Stir in beef stock, tomato paste, thyme, and bay leaf. Add the shanks back to the pot.
- Cover and braise in the oven for about 2 hours until tender.
- Remove from the oven, discard the bay leaf, and let rest before serving. Garnish with parsley.
