Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 medium chopped onion and sauté for about 3-5 minutes until translucent.
  2. Incorporate 2 cloves of minced garlic into the skillet, stirring for about 1 minute while being careful not to burn.
  3. Add 1 pound of ground beef, breaking it apart with a spoon. Cook for about 6-8 minutes until browned.
  4. Mix in sliced red bell pepper and zucchini, cooking for about 5 minutes until the vegetables soften.
  5. Stir in 1 cup of halved cherry tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of ground cumin, ½ teaspoon of paprika, and season with salt and pepper. Cook an additional 3-4 minutes.
