  • 150 g mini mozzarella balls eyeball bases
  • 1 piece black olive sliced into rounds

  • 1 piece cucumber diced
  • 1 piece red bell pepper diced
  • 1 piece yellow bell pepper diced
  • 50 g black olives sliced
  • 50 g green olives sliced
  • fresh basil leaves chopped
For the Dressing
  • 3 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Method
 

Step-by-Step Instructions
  1. Boil water in a large pot. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Slice black olive into rounds and place on each mozzarella ball to create eyeballs. Arrange on top of cooled pasta.
  3. Dice cucumber, red bell pepper, and yellow bell pepper. Halve cherry tomatoes. Add to pasta along with eyeballs and mix gently.
  4. In a bowl, whisk together olive oil, balsamic vinegar, and Italian seasoning. Season with salt and pepper.
  5. Pour dressing over salad mixture and toss gently until well-coated.
  6. Sprinkle chopped basil over the salad, cover, and refrigerate for at least 30 minutes before serving.
