Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry your medium sweet potatoes thoroughly. Lightly rub each potato with olive oil.
  3. Bake the sweet potatoes in the preheated oven for 45-60 minutes until tender.
  4. Once baked, let them cool for about 10 minutes.
  5. Slice each potato in half lengthwise and scoop out most of the flesh into a mixing bowl.
  6. Add softened butter, sour cream, milk, salt, pepper, cinnamon, and nutmeg to the flesh. Blend until smooth.
  7. Stir in cheddar cheese, green onions, and bacon if using.
  8. Spoon the mixture back into the potato skins, mounding it slightly.
  9. Bake again for 15-20 minutes until the tops are lightly browned.
  10. Let cool slightly before serving.
