Preparation Steps
- Melt the chocolate by heating 1 cup of semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals until smooth.
- Whip 1 cup of heavy cream in a bowl until soft peaks form, about 3-4 minutes.
- In another bowl, whisk together 2 large eggs, ¼ cup of granulated sugar, and 1 teaspoon of vanilla extract until light and frothy.
- Gently fold the melted chocolate into the egg mixture, then slowly fold in the whipped cream until smooth.
- Layer the parfaits by starting with chocolate mousse, followed by the strawberry puree, and then chocolate cake pieces.
- Chill the parfaits in the refrigerator for at least 1 hour.
