Preparation Steps
  1. Melt the chocolate by heating 1 cup of semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals until smooth.
  2. Whip 1 cup of heavy cream in a bowl until soft peaks form, about 3-4 minutes.
  3. In another bowl, whisk together 2 large eggs, ¼ cup of granulated sugar, and 1 teaspoon of vanilla extract until light and frothy.
  4. Gently fold the melted chocolate into the egg mixture, then slowly fold in the whipped cream until smooth.
  5. Layer the parfaits by starting with chocolate mousse, followed by the strawberry puree, and then chocolate cake pieces.
  6. Chill the parfaits in the refrigerator for at least 1 hour.
  7. Serve and enjoy cold, possibly with fresh strawberry slices on top.
