- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, pour in 1 tablespoon of olive oil and sauté 2 cloves of minced garlic for 1-2 minutes.
- Add 1 cup of chopped cooked shrimp and 2 cups of chopped fresh spinach to the skillet and cook for 3-4 minutes.
- In a mixing bowl, combine the sautéed mixture with 1 cup of ricotta cheese, ½ cup of mozzarella cheese, 1 teaspoon of salt, and 1 teaspoon of pepper and stir until blended.
- Stuff each large pasta shell with the cheese and shrimp mixture.
- Spread 1 cup of roasted red pepper cream sauce on the bottom of the baking dish and arrange the stuffed shells over it.
- Pour remaining sauce over the stuffed shells and cover with foil; bake for 30-35 minutes.
- Remove the foil during the last 5 minutes to achieve a golden crust.
