Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, pour in 1 tablespoon of olive oil and sauté 2 cloves of minced garlic for 1-2 minutes.
  3. Add 1 cup of chopped cooked shrimp and 2 cups of chopped fresh spinach to the skillet and cook for 3-4 minutes.
  4. In a mixing bowl, combine the sautéed mixture with 1 cup of ricotta cheese, ½ cup of mozzarella cheese, 1 teaspoon of salt, and 1 teaspoon of pepper and stir until blended.
  5. Stuff each large pasta shell with the cheese and shrimp mixture.
  6. Spread 1 cup of roasted red pepper cream sauce on the bottom of the baking dish and arrange the stuffed shells over it.
  7. Pour remaining sauce over the stuffed shells and cover with foil; bake for 30-35 minutes.
  8. Remove the foil during the last 5 minutes to achieve a golden crust.
