Preparation Steps
  1. Prepare Garlic Herb Oil: In a bowl, mix olive oil, minced garlic, oregano, basil, and red pepper flakes. Let it sit for 15 minutes.
  2. Preheat and Grease: Preheat oven to 375°F (190°C) and grease the pan with olive oil.
  3. Roll Out the Dough: Roll pizza dough into a 12x18 inch rectangle.
  4. Apply Garlic Herb Oil: Brush dough with garlic herb oil, saving 2 tablespoons for later.
  5. Add the Cheeses: Sprinkle Parmesan and mozzarella evenly over the dough.
  6. Cut the Dough into Strips: Cut into 1-inch strips and stack 6-8 strips.
  7. Cut the Stacked Strips: Slice stacked strips into 1-inch squares.
  8. Arrange in the Pan: Place dough squares in the pan, cut sides up, packed tightly.
  9. Repeat with Remaining Dough: Fill the pan with remaining dough squares.
  10. Top with Garlic Herb Oil: Brush the top with reserved garlic herb oil.
  11. Bake Covered: Cover with foil and bake for 25 minutes.
  12. Bake Uncovered: Remove foil and bake for an additional 15-20 minutes.
  13. Cool Before Serving: Let cool in the pan for 10 minutes.
  14. Garnish and Serve: Sprinkle parsley on top and serve with pizza sauce.
