- Preheat the oven to 375°F (190°C).
- Roll out the thawed puff pastry sheets until they are about ⅛ inch thick.
- Cut the pastry into squares or circles, approximately 3 inches wide.
- Place the cut-out pastry pieces onto a baking sheet lined with parchment paper.
- In the center of each pastry piece, place a small cube of creamy Brie cheese.
- Spoon about one teaspoon of cranberry sauce over the Brie cheese on each pastry.
- Lightly season with salt and pepper and add fresh thyme leaves on top if desired.
- Fold the corners of each pastry over the filling to create a small package.
- Brush the tops of the pastries with the beaten egg.
- Bake for 15 to 20 minutes or until the pastry is puffed and golden brown.
- Let them cool for a few minutes before serving.
