- In a mixing bowl, place 8 oz of softened cream cheese. Blend until smooth and creamy, about 1–2 minutes.
- Add 1 cup of shredded sharp cheddar cheese and ½ cup of crumbled blue cheese to the bowl. Fold in ¼ cup of finely chopped green onions and stir until well combined.
- Add ¼ cup of crumbled bacon, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon paprika, and ½ teaspoon black pepper into the cheese mix. Blend thoroughly until evenly distributed.
- Using a small scoop, portion out approximately 1 tablespoon of the cheese mixture. Roll into a smooth ball and place on a parchment-lined baking sheet.
- Pour ½ cup of chopped nuts into a shallow dish. Roll each cheeseball bite in the nuts until fully coated.
- Arrange the coated cheeseball bites on a serving platter and cover with plastic wrap. Refrigerate for at least 30 minutes.
