- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, combine the brown sugar, melted butter, vanilla extract, ground cinnamon, and a pinch of salt.
- Brush each apple ring generously with the sugar-butter mixture.
- Lay the coated apple rings flat on the prepared baking sheet and sprinkle shredded coconut over the top.
- Bake for 20-25 minutes until apples are tender and coconut is golden.
- Melt the semi-sweet chocolate chips in a microwave-safe bowl, stirring every 20 seconds until smooth.
- Once baked, cool the apple rings slightly, then drizzle with caramel sauce and melted chocolate.
- Allow to set for about 10 minutes before serving.
