Step-by-Step Instructions for Fresh Cucumber Caprese Salad
- In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, ½ teaspoon of dried oregano, ½ teaspoon of dried basil, and a pinch of salt and pepper. Allow to sit for a few minutes.
- Peel the cucumber, score the skin with a fork, slice thinly and dice into bite-sized pieces. Add to a large salad bowl.
- Quarter the cherry tomatoes and add to the salad bowl with the cucumber.
- If using, thinly slice the red onion and add to the bowl.
- Cut the mozzarella into bite-sized pieces or use pearl mozzarella. Add to the bowl.
- Pour the marinade over the vegetables and cheese. Gently toss to coat everything with the dressing.
- Allow the salad to sit for about 10 minutes before serving.
