For the Salad
  • 1 large Cucumber English or Persian cucumbers are recommended; peel and seed if using regular cucumbers.
  • 1 cup Cherry Tomatoes Quarter them for even mixing and distribution.
  • 8 ounces Mozzarella Use mozzarella pearls for ease or a non-dairy option for a vegan salad.
  • 1 small Red Onion Can be omitted if preferred.

Method
 

Step-by-Step Instructions for Fresh Cucumber Caprese Salad
  1. In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, ½ teaspoon of dried oregano, ½ teaspoon of dried basil, and a pinch of salt and pepper. Allow to sit for a few minutes.
  2. Peel the cucumber, score the skin with a fork, slice thinly and dice into bite-sized pieces. Add to a large salad bowl.
  3. Quarter the cherry tomatoes and add to the salad bowl with the cucumber.
  4. If using, thinly slice the red onion and add to the bowl.
  5. Cut the mozzarella into bite-sized pieces or use pearl mozzarella. Add to the bowl.
  6. Pour the marinade over the vegetables and cheese. Gently toss to coat everything with the dressing.
  7. Allow the salad to sit for about 10 minutes before serving.
