Preparation
- Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans.
- Whisk together all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until smooth.
- Gradually mix in boiling water to the batter until smooth.
- Distribute batter evenly into prepared pans.

- Whip together mascarpone cheese, heavy cream, powdered sugar, and vanilla until soft peaks form.
Layering the Cake
- Place one layer on a serving plate, add mascarpone mixture and cherries.
- Repeat with the second layer.
- Add the final layer and frost the cake with the remaining mascarpone mixture.
- Drizzle with chocolate ganache and garnish with cherries before serving.
